Produced from the neck cut of very selected pigs, it is processed and salted by hand before going through all the various aging stages, including a period of at least 5 months, which will develop the great authentic taste.

It is a product of great balance and personality, characterized by the softness to the cut and to the palate, and by the delicate scent. Refined and decisive in taste.

Pork, salt, pepper natural flavors.

The product can be kept refrigerated between 2°- 7°C, covered by cling film on the sliced side.

“Migliorati” Capocollo is a product of great quality, really different from normal capocollo at the supermarket. The absence of the “picchioli” (small parts of fat) in the lean part and the few very distinct veins of fat prove the higher quality of this capocollo, excellent both eaten with bread and to stuff buns or other bakery products. It’s also perfect for a great starter or as a main, maybe plated together with other of the “Migliorati” products.
